Autumn is setting in and we feel the need for warm nourishing food.
A truly traditional French meal is confit de canard. It's also about the only time you buy French food in a tin.
The duck meat is preserved in it's own fat and canned. All we have to do is open the tin.
Confit de canard is best accompanied by sautéed potatoes. Cut into small cubes or thin slices the potatoes are baked in the oven or fried in a pan using the fat from the duck. Believe me this is delicious. We also add green beans finished off in butter, garlic and parsley.

I remember enjoying ths confit de canard from the can. Yes it is truly delicious and melts in your mouth. I have tried to find it here in Aus but not successful so far. Happy memories!

If it wasn't for the fact I just had a bowl of cereal I would say yum but it sounds delicious!
ReplyDeleteoooh, reminds me of my days in France. My (ex) boyfriend's grandmother used to get together with the women in her village in the southwest of France to cook duck. They would buy live ducks, slaughter them, and then use every part. My two favorites from that project were here fois gras and her confit de canard. She would can them and send them to us throughout the winter. What a treat!

ReplyDeletehi sharon...funny thing - i just saw on another ladies' blog about confit - she also lives in France...this is a very interesting idea to this american! i am going to look into it more after the sale is over...we used to raise our own ducks and the best recipe i made was with baked duck with a red wine cream sauce with fresh mushrooms...yum!

Delicious looking and oh so tasty!!! I think that I have Julia Child's recipe somewhere for this! I am sure it wouldn't taste the same as in France!!!

ReplyDeleteWhat a fabulous photo I can almost taste that beautiful duck confit from here and those crispy potatoes are superbe! Duck is hard to find in my area but yesterday I was able to buy duck and veal sausages from the market ~ they were delish!!

NOn! NON! NON! Sharon - I suggest you join us here in Toulouse for Duck weekend! My hubby makes his own confit and the only thing we get out of the tin then are the haricot beans ... Be warned though - 17 bottles of wine in two days between 8 people (of which 4 men having a great time making the confit, dried magret, duck rillettes, stuffed duck neck and bouillon. What do you say???
